Gorgeous homemade chewy granola energy bars that gives you quality ingredients and low sugar content.

100 grams buckwheat grains (raw)

100 grams jumbo oats

200 grams mixed seeds (pumpkin, sunflower, sesame, linseed)

200 grams ground almonds

4 level teaspoons cinnamon

200 grams mixed nuts, roughly chopped (almonds, pecans, Brazil nuts)

250 grams coconut oil

300 grams peanut, cashew or almond butter or light tahini spread

4 tablespoons Manuka Health Manuka Honey

300 grams pitted Medjool dates, finely chopped

30cm x 20cm (approx) deep baking tray (for brownies), parchment lined


1. Pre-heat oven to160C. In a large bowl mix all dry ingredients, including chopped nuts.

2. In a small saucepan mix coconut oil, nut butter, manuka honey and chopped dates. Place over low-medium heat and stir constantly until smooth and thick. Remove from heat and leave to cool slightly, then add to the dry ingredients and stir well to combine.

3. Transfer mixture to the prepared brownie tray. Press down firmly with back of a spoon dipped in water until mixture is flat and level. Cover first with parchment then tinfoil and bake for 20 -25 minutes. Remove cover and bake for 8-10 minutes more until golden brown.

4. Leave to set in tin then transfer to fridge to chill slightly. Turn out on a chopping board and cut into oblong shapes. Store in airtight container in the fridge.
